This Sunday, I made a large, healthy batch of couscous salad. It’s yummy, light, and perfect for a lunchtime appetite. I combined one cup of cooked and cooled couscous with a chopped red pepper, cucumber, cilantro, green onions, green chiles, salt, and pepper! As a dressing, I’ve been using some extra virgin olive oil and red wine vinegar. You could also use lemon or lime juice! As usual, I got my inspiration from Youtube.
