Quick Eats: Pumpkin Ravioli

I sampled this on my recent trip to Trader Joe’s and fell in love! The recipe (despite a bit of cooking) couldn’t be more easy. This Honey Roasted Pumpkin Ravioli pairs great with the Alfredo sauce also sold in stores.

According to Trader Joe’s, “The filling is a melodic mélange of pumpkin perfection—sweet pumpkin is slathered with honey and a bit of brown sugar and molasses, then roasted, pureed, and blended with ricotta and mozzarella cheeses. This sweet-savory mixture is stuffed into colorful, square pasta—one side is orange-red like a pumpkin shell, the other side a more muted orange, like the inside of the pumpkin.” YUM!!!

This item was on display with the rest of their pumpkin flavored, seasonal items in the refrigerated case for $3.49. Cooking is extremely easy – just heat up some boiling water and add the ravioli for a few minutes. I also heated up some of the Trader Joe’s Alfredo sauce in a small pan to finish the dish. You could also use a bit of melted butter or a mixture of pumpkin butter and cream. Happy Pumpkin Season!
