Creamy Avocado Pasta Sauce

Who doesn’t love to indulge in pasta every once in awhile? If you don’t, then you’re missing out! I love avocados and wanted to incorporate them in a sauce. Here is the recipe I concocted up:

  • I used 1 small avocado for one serving (you could use about half of a large one = 1 serving). Use an avocado that will easily mash. Cut the avocado up and mix it up into a creamy consistency.
  • Add this avocado mix to about 4 large tablespoons of alfredo sauce. You can use any brand, but I used Trader Joe’s in this recipe. Add pepper, oregano, and garlic paste/powder/cloves to the mixture and let simmer on the stove.
  • Sautee mushrooms in a separate pan with light olive oil. Add mushrooms and frozen peas to the sauce (along with any other favorite veggies) and continue to cook on a low heat.
  • I would cook the sauce for about 10 minutes total from start to finish. Then add to pasta and top with parmesan cheese – Enjoy!

  1. Wow! That looks so so so delicious! Avocados have always been a part of my diet but I’m looking for more ways to incorporate them in my meals other than through salads, sandwiches and guacamole!
