Who doesn’t love breakfast? It’s probably my favorite type of food. However, I’m usually in a hurry for breakfast time. This entire meal took me only about 10 minutes to whip up! It’s filling, yet very healthy and nutritious to get your day going.
Here’s what we’re making for our Quick Eats breakfast:
– Coffee or Tea of your choice – I used Dunkin’ Donuts Original Blend and Coffee-mate’s Natural Bliss dairy creamer in Vanilla.
– Avocado Toast – My favorite part of the meal! You’re going to make this spread while you’re toasting the bread. Use a 1/2 avocado for lighter appetites and a full one if you’re hungry. Mash up the avocado in a bowl and add salt, pepper, a splash of lemon or lime juice, and red chili flakes to taste… it’s that easy! I like to lightly spread some Earth’s Balance natural butter spread on my toast (it’s better for you than regular butter) before smearing on my avocado mixture.
– Scrambled Eggs or Egg Whites – I like to keep mine fluffy by adding in a tablespoon of milk per egg, then mixing in a pinch of salt and pepper. I like to skip the cheese to keep it lighter, but you can certainly add for the flavor. Make sure to constantly move your eggs in the pan so they don’t get dried or cripsy while cooking.
